Bali's first seafood delicatessen, Bonito is the work of Chef Maurizio Bombini (of Seminyak's Mauri). Most of the catch is landed sustainably off Bali, Lombok, Flores and Timor, cleaned and cut in-house, then served as crudo, ceviche, pan-seared or straight from a display of fillets, shellfish and live oysters — a connoisseur's fish bar in Umalas.
